4 baking potatoes
1-2 cups vegetables
1/2 cup rice krispies or corn flakes
rice or other suitable flour for dusting
seasoning (optional)
veg oil
Cook potatoes and vegetables until soft.
Mash together with fork or puree.
Mix in crushed cereal and seasoning.
Add a touch of flour to bind and form into a nugget or pancake shape.
Dust with flour on both sides.
Fry in oil until golden brown and crisp.
Serve immediately or freeze on cookie sheets.
I use combinations like carrot, potato, apple with ginger and nutmeg
Or broccoli, zucchini potato and Italian seasoning
You can even add cooked fruits. I quadruple the recipe and stock the freezer.
