Sweet and Fluffy Applesauce Flapjacks

1 tsp sugar (optional)
1/2 tsp xanthan gum
1/2 tsp baking soda
3/4 cup white rice flour
1/4 cup tapioca starch
1/2 to 3/4 cup water
1 Tbsp canola oil
1 Tbsp maple syrup
2 big spoonfuls applesauce
2 Tbsp apple cider vinegar


Mix flours and dry ingredients together. Add oil and water, then applesauce. At the very end, add vinegar and mix well. Spoon batter onto hot griddle or pan and turn when bottoms are brown.
