P’s Pumpkin Pie

Ingredients

1 14 oz can pumpkin puree
3 Tbsp maple syrup
1 tsp ginger powder
1 tsp ground cinnamon
1 tsp nutmeg
pinch salt
3 Tbsp tapioca starch
1 tsp apple cider vinegar
1 small ripe plantain
water
1 9 prepared pie shell

Directions

Cut plantain in chunks, boil in water. Pour off most of the water, then puree mixture adding water when necessary.

Mix all ingredients together, including the plantain puree. Mix in the apple cider vinegar last.

Pour into prepared pie shell. Bake at 350 °F for 30 – 40 minutes.
