2 tsp baking soda
1/2 cup olive oil
1/2 cup maple syrup
1 1/2 cups applesauce
1 tsp salt
2 1/2 tsp xanthan gum
2 1/2 cups quinoa flour
substitution for one egg


Mix dry ingredients, then stir in remaining ingredients. Bake 350 °F in a greased muffin tin for 13 minutes. Makes 9 muffins.
