Wheat-Free White Bread for Bread Maker

Ingredients

3 eggs
1 1/2 cup dairy-free milk alternative
1/4 cup oil
1 1/2 tsp apple cider vinegar
1/3 cup sweet rice flour
2/3 cup garbanzo or fava bean flour
1 cup white rice flour
1 Tbsp xanthan gum
1/2 cup potato starch
1/2 cup tapioca flour
1/2 cup arrowroot starch or cornstarch
2 1/2 Tbsp sugar
1 1/2 tsp salt
2 1/4 tsp yeast

Directions

Put liquids straight into bread machine. Mix all dry ingredients except yeast in a separate bowl. Add on top of liquid (unless your machine does dry first, then liquids). Add yeast. I use a two pound dark loaf setting on my machine.

Notes

Substitutions

To avoid eggs, use 4 1/2 tsp EnerG Egg Replacer and 6 Tbsp water.

To avoid legumes, use 1 cup brown rice flour instead of 1/3 cup sweet rice flour and 2/3 cup garbanzo/fava bean flour.
