3 Granny Smith Apples, diced small
1/2 cup brown or white sugar
1 Tbsp starch *
1/4 cup apple juice or cider
2 in piece vanilla bean
1/4 tsp ground cinnamon (optional)
1/4 tsp ground nutmeg (optional)


Peel and dice the apples into small cubes. Mix the starch (corn, tapioca) into the apple juice. Place all ingredients into a medium saucepan. Cut a slit in the vanilla bean and scrape the insides into the pan, add the bean and tiny seeds to the mixture.

Bring to a boil and then reduce to a simmer for about 15 minutes.

Use this quick apple filling as a topping for pancakes, a filling for donuts or pies, or a topping for ice cream.

The vanilla bean should be removed at the end. You can rinse it off and set it out to try to re-use in another recipe. (It can be re-used several times before the flavor is fully gone.
