Ingredients

2 cups mild flavored vegetable oil
1 cup annatto seeds

Directions

Place the oil in a heavy 2-quart saucepan and heat to about 350 °F. Do not let it overheat and smoke. Add the annatto seeds and remove pan from heat. Allow to cool completely and strain into a glass jar. Store in refrigerator.

Notes

Annatto oil has the bitter flavor and yellowith orange color of saffron, but is much less expensive. Use a couple of tablespoons to either replace or supplement saffron called for in a recipe.

Annatto seeds can be found in Latino or Filipino markets. Try to get in bulk as it’s cheaper than the little bags. I’ve even found them in Asian markets.
