Heat a griddle or large non-stick pan over med-high heat. Pour 1/2 cup batter in pan and spread out with a spoon. Sprinkle on topping. Cook about 2 minutes and pour some oil around the edges and on top and cook another 2 minutes. Use a large flat spatula and flip over. Press down. Cook 2 more minutes until it looks cooked. Remove and serve immediately or keep warm while cooking the rest.
Notes
These are made with leftover Dosai Bean and Rice Crepes or Idli Steamed Rice and Bean Dumplings batter.
