Heat a griddle or large non-stick pan over med-high heat. Pour 1/2 cup batter in pan and spread out with a spoon. Sprinkle on topping. Cook about 2 minutes and pour some oil around the edges and on top and cook another 2 minutes. Use a large flat spatula and flip over. Press down. Cook 2 more minutes until it looks cooked. Remove and serve immediately or keep warm while cooking the rest.
