Orange Juice Cupcakes

2 3/4 cups flour
1 1/4 cup sugar
2 tsp baking soda
1/2 tsp salt
1 tsp baking powder
1 cup orange juice
1/2 cup oil
2 large ripe bananas, mashed
1/2 tsp grated orange rind
1/2 cup confectioners (powdered) sugar
1/4 cup orange juice


Preheat oven to 400 °F.

In a large bowl, combine flour, sugar, baking soda, salt, and baking powder.

Stir in juice, bananas, oil, rind. Bake 25 minutes.

For glaze, combine confectioner’s sugar and orange juice. Cool cupcakes completely, then drizzle with glaze.



Splenda works in place of the sugar.
