Oat Banana Bread

1/4 cup margarine
1/2 cup brown sugar
2 Ener-G Egg Replacers, prepared
1 cup oat bran
4 ripe bananas
1 tsp vanilla
1 cup oat flour
1/2 cup additional flour (see below)
2 tsp baking powder
1/2 tsp baking soda
1 tsp xanthan gum (optional)


Preheat oven to 350 °F and grease loaf pan.

Mash the bananas well and set aside. Using a mixer, cream together the margarine and brown sugar. Add the egg replacer and mix well. Add the oat bran, bananas, and vanilla. Mix well. Mix together the remaining ingredients, then add to the wet mixture. Mix just until flour mixture is moist.

Bake for 55-60 minutes.



Additional 1/2 cup of flour can be all or mostly oat combined with buckwheat or rice.
