1 cup sugar
3/4 cup water
2 Tbsp fresh chopped mint (optional)
1 ripe honeydew
2 Tbsp lemon juice
3 Tbsp honey
1/4 cup champagne or fruit juice


Peel and seed melon. Puree in blender or food processor.

Bring sugar water and mint to boil. Let mix cool and strain to remove mint. Mix remaining ingredients including puree. Stir until well combined. Freeze according to manufacturer’s instructions.



Can substitute 1 1/2 cantaloupes for the honeydew melon.
