Ingredients

5 cups gluten-free bread
1/3 cup celery
1/3 cup onion
1/3 cup carrot
1/2 cup margarine
1 tsp celery seed
2 tsp garlic
2 tsp salt
sprinkle fresh pepper
2 1/2 cups chicken broth

Directions

Lightly toast the diced bread.

Melt the margarine in a saucepan, and saute the diced vegetables.

Combine all ingredients, and bake at 350 °F until the stuffing is heated through and the top is beginning to crisp up – about 45 minutes.

Notes

Bread used was about 1 loaf of Food For Life millet bread. Margarine was Earth Balance.
