In a medium bowl, combine the canola oil, vinegar, mustard, sugar, salt and pepper. Add the orange zest and juice, celery and peppers and stir. Add the chicken and rice and mix well. Stir in the cranberries, then refrigerate until ready to serve.
This makes a really good breakfast, since it’s fruity but still has protein in it. You could also omit the chicken and make it a vegetarian meal.
