1 1/4 cups boiling water
1 cup quick cooking oats
1 cup brown sugar
1 cup white sugar
1/2 cup shortening or oil
2 eggs or equivalent replacement
1 1/3 cup wheat or oat flour
1 tsp vanilla
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
Boil water and pour over oats. Let cool. Cream together sugars and shortening. Add eggs.
Sift (oat flour really needs to be sifted) in dry ingredients. Add oats.
Bake in a 9×13-inch pan at 350 °F for 30 minutes.
Oat flour works really well.
Can sub a safe oil for the shortening.
Any egg replacer will probably work well.
