Cameron’s Best Chocolate Pudding

Ingredients

3 cup water
1 cup long grain white rice
1/2 tsp salt
1/4 cup cocoa
3/4 cup sugar or comparible sweetener
2 Tbsp canola oil or other mild oil
2 Tbsp tapioca or corn starch
2 tsp vanilla extract

Directions

Place water, salt, and rice in saucepan and cook uncovered at slow boil stirring occasionally until thick porridge stage. This may take over an hour. Cool.

Pulse in batches through food processor or blender until smooth and add back to saucepan.

Add all other ingredients and whisk to mix while heating saucepan to low boil to activate tapioca starch.

I place in single serve containers for easy on-the-go snacking once cooled.

Batch can be doubled.

You can thin it out with water until desired consistency for rich chocolaty rice milk!

Notes

I am also trying this in my ice cream machine for a frozen treat.
