Melt margarine in saute pan. Cut bread slice into small cubes (<1/4″.) Add to margarine. Season with salt and parsley flakes (optional). Saute until golden. May add chicken broth (optional) for flavor and moisture; crumbs should be moist when done.
Combine ground turkey and veggie puree in large bowl. (Gerber 2nd stage mixed veggies is my favorite, but I’ve used squash, green beans, peas, and regular applesauce with great success.)
Add sauteed crumbs to turkey-veggie mixture; mix thoroughly. Shape into patties approx. 3/4″-1″ thick and place on counter-top grill (panini grill, George Foreman grill, etc). Sprinkle patties with salt and parsley flakes (optional). Cook on Medium until juices run clear and center is no longer pink. Can pour grill drippings over finished patties for extra flavor and moisture.
May also cook by placing in saute pan and covering with lid. When tops are no longer pink, remove lid and flip with spatula. Remove lid and the juices will reduce into a nice thin “gravy” that can be poured over the finished product.
Can be served burger-style with safe buns, protein-style (in lettuce wraps), or naked.
Makes 4 large patties, up to 8 small (kid-sized) ones.

These patties are quick and easy, and are a good way to get protein, carbs, and even a little veggie into my kids! Our Bubby (grandmother) first had the idea to use sauteed bread crumbs. Mmmm. A flavorful addition to any grill!
