2 to 3 lb ground turkey
1/2 to 1 cup salsa
1 1/2 cups cornmeal
1/2 cup gluten-free flour blend
1/2 tsp xanthan gum
1/3 cup sugar
1/4 cup margarine, melted
1 1/2 cups rice milk
1/2 can creamed corn
Brown meat with salsa.
Separately, mix remaining ingredients together.
Put meat in large rectangular casserole dish. Spoon cornbread mixture over meat.
Bake at 350 °F. for 45 minutes or until cornbread is done. (It will brown and feel *done* to the touch.)
