White Chip Candied Puffs

Ingredients

1/3 cup sugar
2 equivalent egg substitutes
1 Tbsp coconut oil
1 Tbsp dairy-free margarine
1 tsp vanilla extract
1/3 cup gluten-free flour mix
1/2 cup vegan ricotta cheese
1/2 cup vegan cream cheese
zest of 1 lime plus more for topping
1 Tbsp So Delicious® Dairy Free Dairy Free Original Culinary Coconutmilk
1 tsp orange extract
1 cup confectioners sugar
dairy-free white chocolate chips, for topping

Directions

Preheat oven to 375°F. Lightly grease a baking sheet and set aside.

In a bowl whisk together sugar and egg substitutes. Add in oil, margarine and vanilla. Whisk in flour until smooth.

Spoon batter onto greased baking sheet to make about 6 puff shells, leaving room between each to spread.

Bake for 7 minutes until slightly golden.

Meanwhile, in a bowl whisk together ricotta and cream cheese until smooth. Add in zest of a lime, coconut milk and orange extract. Whisk in confectioners sugar.

Once puff shells are baked, quickly roll each into a tube shape and place seam side down on a dish. Allow to cool completely.

Using a pastry bag, or plastic bag with a corner snipped off, pipe the filling into the puff shells.

Top each with white chocolate chips and sprinkle with lime zest. Serve immediately.

Substitutions

Butter and Margarine: Butter is a dairy product made from cow’s milk. Margarine typically contains milk or soy, but there are milk-free and soy-free versions available.
Coconut: Although classified by the FDA as a tree nut, coconut is not a common allergen and is not related to tree nuts. If you have a tree nut allergy, consult your physician to find out if you need to avoid coconut.
