1 cup rice flour
1 Tbsp baking powder
1 large spoonful rice syrup
1 1/2 to 2 cups liquid (water, apple juice, etc)
oil (rice, coconut, or other safe for allergen set)
Stir together dry ingredients. Stir in rice syrup. Stir in liquid to make batter.
Fry in puddles of oil (I use coconut) for pancakes, or spoon into VERY well greased waffle iron for waffles.

Use safe baking powder or mix your own from the substitutions section.
Coconut: Although classified by the FDA as a tree nut, coconut is not a common allergen and is not related to tree nuts. If you have a
tree nut allergy, consult your physician to find out if you need to avoid coconut.
