Bring milk to room temperature, or warm for 15-20 seconds in microwave. Add to bread pan. Add applesauce and cherry juice. In a medium mixing bowl, combine flour, sugar, baking powder, and salt. Mix well and add to bread pan. Add cherries. Cook on quick bread setting (and I use the light crust setting). When the machine is finished, turn it to bake only. Check your bread every five minutes until the center is no longer doughy (it takes my bread machine about 15 extra minutes).
Notes
This makes a very short, heavy, sweet bread!! If you cool and store in a plastic bag, it will stay fresh for days on the counter.
I found dried cherries at Sam’s Club and the cherry juice comes from canned organic cherries (I always reserve the juice from the can just for this bread).
Substitutions
The original recipe was for cranberry nut bread. You can add 1/2 cup chopped walnuts, or other nuts, if you wish. You can also substitute 2 large eggs for the applesauce, 6 oz regular milk for the soy, and 1 Tbsp vegetable oil for the cherry juice.
Corn Substitutions: Corn is a common ingredient in products. Starch, modified food starch, dextrin and maltodextrin can be from corn. Consult with your physician to find out which corn derivatives you need to avoid. Many corn-free options are available in the US. Find out more about corn substitutions.
Gluten: Gluten is a protein found in specific grains (wheat, spelt, kamut, barley, rye). Other grains are naturally gluten-free but may have cross-contact with gluten-containing grains.
