Rinse the quinoa well.
In a sauce pan combine the quinoa, water and orange juice and bring to a boil. Reduce heat and simmer for about 10-15 minutes or until liquid has been absorbed. Fluff with a fork.
Fold in the dried cranberries, transfer to a bowl and refrigerate until chilled.
Meanwhile, whisk together the olive oil, lemon juice, cumin, coriander, paprika, salt and pepper. Gently stir spice mixture and the fresh cilantro into the chilled quinoa.
