Ingredients

1 1/4 cups applesauce
1/2 cup margarine
2 scant cups flour
1 generous cup sugar
1 tsp cinnamon
3 Tbsp baking powder
1 generous cup raisins
sprinkle demerara sugar

Directions

Preheat the oven to 350 °F.

Cream the margarine and sugar. Fold in the applesauce, sift in the flour, baking powder, and cinnamon. Stir in the raisins. Turn into a greased 7″ cake tin and bake for 1 and a half hours. If the top is browning too much, cover it after about an hour to prevent burning. Ten minutes before the end sprinkle with demerara sugar.

Demerara sugar is a course raw sugar.

Substitutions

Original recipe calls for making about a pint and a half of unsweetened applesauce from 2 or 3 cooking apples.

The 3 tsp baking powder can be replaced with 1 tsp baking soda.
