Ingredients

3 lb boneless country spare ribs
3 tsp kosher salt
1 1/2 tsp freshly ground pepper
1 tsp cayenne pepper
1 tsp garlic powder
1 tsp onion powder
1/8 tsp paprika
1/2 tsp Italian seasoning
1/2 cup red wine or water

Directions

Coarsely grind meat.

Mix spices with wine (or water if grape or sulfite allergic). Pour evenly over meat and mix thoroughly. This can be done using the flat beater of the mixer on “Stir” for about 1 minute. Don’t overmix. This can be used as bulk sausage or stuffed into casings for links.
