Ingredients

3/4 cup barley flour
1/2 cup oats
1/4 cup oat flour
1/2 tsp salt
1 tsp baking powder
1/4 cup cocoa
1/2 cup sugar
1/3 cup oil
2 Egg Replacers
1/2 tsp vanilla or imitation almond flavor
1/2 cup chocolate chips (optional)

Directions

Preheat oven to 400 °F.

Mix together flours, oats, salt, baking powder, and cocoa. In a separate bowl, beat together sugar and wet ingredients. Add in the flour mix and beat till wet through. Add chocolate chips if using.

Spoon onto cookie sheet and cook 6 minutes.

Notes

This makes a small batch. The recipe should be able to be doubled.
