Daddy’s Oatmeal Chocolate Chip Cookies

Ingredients

1 cup margarine
1 cup brown sugar, lightly packed
1 cup sugar
1 1/2 Tbsp vanilla extract
1 cup baby oatmeal cereal or oat flour
1 1/2 tsp baking soda
1/2 tsp salt
3 cups oatmeal, preferably quick oats
1 cup chocolate chips

Directions

Preheat oven to 375 °F.

Combine sugars and margarine until creamy. Add vanilla and mix well. Sift baking soda, salt and baby oatmeal cereal together and add to butter and sugar mixture, mixing thoroughly. Add oats and chocolate chips and mix well.

Roll into 1″ size balls and place onto non-stick baking sheet. Bake for 10-13 minutes. Let cool for 5-10 minutes, then move to a cookie rack to cool completely.

Makes about 3 dozen cookies.

Notes

Substitutions

We use Eden Margarine – Kosher for Passover because it is dairy and corn free. Any stick margarine should work fine.

We use Frontier Vanilla- alcohol free, because we were told it is corn free. Or use homemade vanilla extract from potato vodka or rum and vanilla beans.

We use Enjoy Life chocolate chips, which are free of the top 8 allergens and corn.

Oat flour can be made by pulsing rolled oats in a blender until powdered.

Butter and Margarine: Butter is a dairy product made from cow’s milk. Margarine typically contains milk or soy, but there are milk-free and soy-free versions available.
Gluten: Gluten is a protein found in specific grains (wheat, spelt, kamut, barley, rye). Other grains are naturally gluten-free but may have cross-contact with gluten-containing grains.
