2 cups white sugar
1/2 cup soy or rice milk
1/2 cup margarine
4 Tbsp cocoa
2 1/2 cups oatmeal
1/2 cup peanut butter
1 tsp vanilla
Bring the sugar, milk alternative, margarine and cocoa to a boil and cook for 1 1/2 minutes. Add oatmeal, peanut butter, and vanilla. Mix well and drop by spoonfuls on waxed paper and let cool. Depending on how big you make the cookies (I make them rather large) you get approximately 12-18 cookies.
