Broccoli Soup and Millet

2 cups broccoli
1 large raw carrot
1/2 raw sweet onion
1 clove peeled, raw garlic
1 medium sauteed onion
2-3 cloves sauteed garlic
2 cups cooked millet
sunflower seed meal (optional)


Blanche broccoli, reserving the water.

In a blender add blanched broccoli, raw carrots, onion, raw garlic and sauted onion and garlic. Add some boiling water leftover from blanching broccoli; puree until smooth.

Cook millet according to instructions. Serve soup poured on top of the millet.

Serve with a sprinkle of roasted sunflower seed meal on top.


If you can have legumes, add some beans to the soup such as mung beans or navy beans and skip the sunflower seed meal.
