Recipe Created By: Maren Chiu
3/4 cup warm water (100-115 degrees F)
1 Tbsp oil
4 Tbsp rice milk
3 Tbsp sugar
1 tsp salt
1 cup rice flour
1 cup barley flour
1/4 cup tapioca starch
1 tsp xanthan gum
5 tsp yeast
Mix together rice flour, barley flour, tapioca starch and xanthan gum. Add ingredients to bread machine according to bread machine instructions. (In my Breadman brand machine, I add liquids first, then dry ingredients, with yeast as the last addition.) Bake on “super rapid” cycle or equivalent. Makes 1 lb loaf.
I use canola oil. Do not double recipe for 2lb loaf…it doesn’t turn out right.
Can sub water or soy milk for the rice milk.
Corn Substitutions: Corn is a common ingredient in products. Starch, modified food starch, dextrin and maltodextrin can be from corn. Consult with your physician to find out which corn derivatives you need to avoid. Many corn-free options are available in the US. Find out more about
corn substitutions.
Gluten: Gluten is a protein found in specific grains (wheat, spelt, kamut, barley, rye). Other grains are naturally gluten-free but may have cross-contact with gluten-containing grains. Look for certified gluten-free products if you need to avoid gluten. Find out more about
