Barley Bread for Bread Maker

Ingredients

3/4 cup warm water (100-115 degrees F)
1 Tbsp oil
4 Tbsp rice milk
3 Tbsp sugar
1 tsp salt
1 cup rice flour
1 cup barley flour
1/4 cup tapioca starch
1 tsp xanthan gum
5 tsp yeast

Directions

Mix together rice flour, barley flour, tapioca starch and xanthan gum. Add ingredients to bread machine according to bread machine instructions. (In my Breadman brand machine, I add liquids first, then dry ingredients, with yeast as the last addition.) Bake on “super rapid” cycle or equivalent. Makes 1 lb loaf.

Notes

I use canola oil. Do not double recipe for 2lb loaf…it doesn’t turn out right.

Substitutions

Can sub water or soy milk for the rice milk.
