Ingredients

1/2 cup margarine
2 Tbsp sugar
1 Tbsp baking powder
1 cup barley flour
1/3 cup cornstarch or potato starch
1/3 cup tapioca starch
1/3 cup rice flour
1 tsp salt
1 tsp xanthan gum
3/4 cup milk or milk alternative
up to 1/2 cup additional gluten-free flour

Directions

In a large bowl, mix the dry ingredients. Cut in the margarine. Then stir in the milk alternative. Knead by hand, adding additional flour until you reach a workable texture.

Shape into 10-12 biscuits and bake at 450 °F for 10-12 minutes.

These are actually flaky like *real* biscuits.

Substitutions

Butter and Margarine: Butter is a dairy product made from cow’s milk. Margarine typically contains milk or soy, but there are milk-free and soy-free versions available.
Corn Substitutions: Corn is a common ingredient in products. Starch, modified food starch, dextrin and maltodextrin can be from corn.
