1 cup flour
1 Tbsp sugar
1 tsp baking powder
1 cup water
1/4-1/3 cup oil
1/3-1 tsp vanilla extract (optional)
Mix and cook on a well-seasoned, well-heated griddle.
We double this now that our son is a voracious teenager. His favorite variation of this is
Apple Cinnamon Pancakes.
