No-Bake Coconut Date Balls

1/2 cup margarine
3/4 cup sugar
1/2 lb dates, chopped
1 tsp vanilla
1/2 tsp salt
2 cups crispy rice cereal
1/2 cup coconut, shredded
1 cup additional coconut for rolling


Mix margarine, sugar and chopped dates. Cook over low heat, stirring constantly, until thick and gooey, approx 10 minutes. Remove from heat. Stir in vanilla. Allow to cool. Stir in 1/2 cup coconut and rice cereal. Roll into bite sized balls. Roll balls in shredded coconut.


I like to buy whole dates and chop them myself. Pre-chopped dates are usually coated in sugar or something else to keep them from sticking.

These taste best if they are allowed to sit overnight before eating.

These keep best in the fridge.


Butter and Margarine: Butter is a dairy product made from cow’s milk. Margarine typically contains milk or soy, but there are milk-free and soy-free versions available.
