Heidi’s One Pan Vegan Cake

1 1/2 cups brown rice flour
1/4 cup tapioca flour
1 tsp baking soda
1/2 tsp salt
1 cup sugar
1/2 cup vegetable oil
1 cup cold water
2 tsp pure vanilla extract
2 Tbsp apple cider vinegar
1 tsp xanthan gum


Preheat oven to 350 °F.

Sift dry ingredients into an 8″ square or 9″ round baking pan. Mix liquids except the vinegar and wisk into dry ingredients. When the batter is smooth, add the vinegar and stir quickly, until it is evenly distributed.

Bake 25-30 minutes. Cool completely.

Sugar can be reduced to 1/2 cup.
