3 heaping tsp baking powder
1 cup applesauce
1 1/4 cup millet or rice flour
1/2 tsp cinnamon (optional)
1/3 cup oil
1/2 tsp baking soda
3/4 tsp salt
1/2 cup sugar
1 tsp xanthan gum
1/2 cup potato, corn, or tapioca starch
Sift dry ingredients together. Add wet ingredients and mix until blended. Pour into 9×5 inch loaf pan. Bake in a preheated 350 degree F oven for 45 minutes. Cool for 15 minutes and remove from pan.
Can substitute pear puree or 2 mashed bananas for the applesauce.
