Heat wok and add oil. Add garlic and ginger and quickly toss. Add onion and snow peas. Toss for a bit and add ham. Stir fry a bit and add rice. Add about a tablespoon of water to help steam the rice. Keep tossing until everything is heated through. Add a few slugs of ponzu sauce – not too much, you don’t want it soupy.
Stir everything around and serve.

The proportions for this are really to taste or whatever you have on hand.

If you cannot find safe ponzu sauce, you can sub soy sauce or wheat-free tamari and a little lemon juice.
