Ingredients

1/2 lb ground chicken or ground chicken thigh
2 cups beef stock
salt and pepper to taste
1 cup pasta of choice
1 container (4oz) green beans
1 container (4oz) carrots
1 container (4oz) peas
1 container (4oz) corn

Directions

Roll ground chicken or ground chicken thigh in 1-2 inch balls and place in bottom of crock pot. I made about 15. Then add enough beef stock to cover the balls, add salt and pepper to taste and cook on high for about 6 hours.

Then add pasta of your choice, cook for about 20-30 mins on high or until pasta is tender. Then add vegetables of your choice. I used the microwaveable veggies (corn, green beans, peas and carrots) and cook for an additional 10 mins or so and “tada”, a yummy safe stew for kiddos. I got about 7 meals out of it.

Notes

Here is my recipe for a chicken ball stew that I made for my son who is allergic to so much stuff. L is allergic to all of the top 8, plus oat, barley, onion, garlic, apricots, grapes, oranges, sweet potatoes, turkey and some type of bean.

I added a little more pepper for it. My 10 year old and 8 year old also really liked it.

Substitutions

Use pasta of choice.

Use any safe broth or meat stock.

Use any veggies depending on taste and allergens.

Other ground meats could be substituted for the ground chicken.

Corn Substitutions: Corn is a common ingredient in products. Starch, modified food starch, dextrin and maltodextrin can be from corn.
