4 lb boneless country spare ribs
1/4 tsp cayenne pepper
2 tsp kosher salt
1 tsp freshly ground black pepper
1 tsp ground sage
1/8 tsp nutmeg
1/2 cup water
Coarsely grind meat.
Separately, mix spices and water. Pour evenly over meat and mix thoroughly. This can be done using the flat beater of the mixer on “Stir” for about 1 minute. This can be shaped into patties or stuffed into small size casings for breakfast links.
