Mix up vanilla pudding mix with coconut milk instead of whole milk. Chill.
Over medium heat, combine margarine, brown sugar and cinnamon in pan, and heat until butter has melted. Add bananas and continue to cook over medium heat until the bananas are soft, about 3 – 5 minutes.
Pour over a cup of the pudding and ENJOY!!!

My 16 month old son loved this. It is a great way to increases calories and is milk/soy free.
Substitutions
Bananas could be replaced with pears, apples, any fruit of choice.
It is unknown whether this would work with Kosher for Passover instant pudding in order to make corn free. Be sure to verify that the instant pudding mix is safe for your allergens.
Butter and Margarine: Butter is a dairy product made from cow’s milk. Margarine typically contains milk or soy, but there are milk-free and soy-free versions available.
Coconut: Although classified by the FDA as a tree nut, coconut is not a common allergen and is not related to tree nuts. If you have a tree nut allergy, consult your physician to find out if you need to avoid coconut.
