1/4 cup shortening
1/2 tsp vanilla
1 cup mashed banana
1/2 cup raisins
1 cup brown sugar
1/2 tsp lemon juice
1 1/2 cups flour
2 tsp baking powder
Cream shortening and sugar; beat in vanilla, lemon juice and banana. Stir in flour and baking powder, then raisins. Bake in cup cake tin at 350 °F for about 20 – 25 minutes.
This recipe is from the UK and the poster states “I think cup cake cases here may be smaller so they may need (to bake) longer.”
