Bring rice and water to a quick boil in a pan, including cinnamon stick if desired. Reduce heat, cover and simmer for about 15 minutes or until water is absorbed.
Add soy milk, 1/4 cup cane sugar, and, if desired, raisins. Cook uncovered for about 10-15 minutes.
Remove from heat, take out cinnamon stick and cover. Let sit for a few minutes.
You can serve hot or cold.
We made this without raisins or cinnamon and it was delicious! 🙂
