Annika’s Turkey Pumpkin Patties

Ingredients

1 to 1 1/2 lb ground turkey
1/4 cup finely chopped onion
3 cloves garlic, finely chopped
1 stalk celery, finely chopped
1/3 cup canned pumpkin
1/2 tsp basil
1/2 tsp oregano
to taste salt

Directions

Mix all ingredients together.

This mixture will be loose, and will not form traditional patties. Take a large spoon and drop by spoonfuls onto a lightly oiled, hot griddle. Flatten with a spatula.

Cook for about 3-4 minutes per side.

Serve with baked herbed potatoes or rice noodles.

Note, this is an “Annika safe” recipe invented by her and her adopted grandmother.

Substitutions

Ground turkey generally has added “flavors” which are usually rosemary. Be sure to very that your ground turkey is safe for your needs.
