1 1/4 cup gluten-free flour blend
2 tsp baking powder
1/2 tsp salt
1 Tbsp brown sugar
2 Tbsp oil
scant cup rice milk
2 Tbsp applesauce
1/4 cup frozen raspberries, thawed and smashed
Mix all ingredients well. Pour 1/4 cupfuls onto hot skillet. Flip when the top appears dry.
Susan makes her flour blend up from 4 cups of sorghum flour, 4 cups potato starch, and 1 cup garbanzo bean flour.
