1 1/2 cups sugar
2 cups flour
1 tsp baking soda
2 tsp baking powder
1 cup oil
2 tsp cinnamon
1/4 tsp ground cloves
4 eggs
1/2 cup cream cheese frosting (optional)
1 16 oz can pumpkin (or fresh equivalent, cooked)
Combine flour, sugar, baking powder, cinnamon, soda, salt, cloves. Stir in eggs, pumpkin, and oil until thoroughly combined. Spread into ungreased 15x10x1 inch pan. Bake in oven at 350 °F for 25 to 30 minutes or until toothpick comes out clean. Cool on rack. Cut into bars. Frost with frosting if desired.
To avoid milk (dairy), omit cream cheese frosting or make with a milk-free cream cheese.
