Tzimmes aka Beyond Glazed Carrots

2 lb carrots – either peeled and chopped, or baby carrots
2 tsp oil
2 Tbsp brown sugar
to taste cinnamon (optional)
1/4 tsp salt


Put all ingredients in a pot, on high heat, until it starts to brown, shaking/stirring the pot periodically. Reduce heat to bare simmer, and cook until they are as soft as you want. If they are only just soft, they are standard glazed carrots. Once they get really soft, they are the traditional tzimmes.


Unless you burn these (you can add a little water if it gets really dry), you can’t ruin them.


Brown sugar can be replaced with 1 Tbsp honey or 1 Tbsp white sugar.
