Shredded Sesame Chicken

Ingredients

2 boneless, skinless chicken breasts
1 small carrot
1 rib celery
1/2 small onion
5 peppercorns
2 Tbsp soy sauce or tamari
2 Tbsp tahini
1 Tbsp sesame oil
1 Tbsp vinegar
1 tsp grated fresh ginger
2 cloves garlic, minced or pressed

Directions

In a small saucepan, lightly poach chicken with celery, carrot, onion and peppercorns. Cool and shred. Reserve broth for another use if desired.

Prepare dressing by whisking together remaining ingredients. Pour over chicken. Refrigerate at least an hour.

This can be used as is or as a base for Sesame Chicken Salad or Sesame Chicken Spring Rolls.

Substitutions

Wheat-free tamari can be used in place of soy sauce.
Corn Substitutions: Corn is a common ingredient in products. Starch, modified food starch, dextrin and maltodextrin can be from corn.
