1/2 cup oil
3/4 cup brown sugar
2 eggs
1/4 cup milk or dairy-free milk alternative
1 tsp salt
2 mashed bananas
2 cups oat flour
1 tsp baking powder
1 1/2 cups rolled oats
1 tsp vanilla
chocolate chips
Blend all ingredients.
Spoon into greased or papered muffin tins.
Bake at 375 °F for approximately 20 minutes.
The 2 eggs can be replaced by 2 additional bananas OR 1/2 cup applesauce.
