1 1/4 cups pitted manzanilla or other green olives, rinsed and drained well
1 Tbsp drained capers
1 large clove garlic, minced
1 tsp fresh lemon juice
1/4 cup olive oil, preferably extra-virgin
1 Tbsp fresh cilantro


Put olives, capers, and garlic together in a food processor and chop finely. With motor of processor running, gradually add lemon juice and olive oil and process until blended.

Transfer to bowl. Stir in cilantro. Season to taste with pepper.


Make sure you use olives that are pitted and that aren’t stuffed – I use a jar of Goya manzanilla olives.

Seems like it doesn’t make very much, but a little goes a long way.
