1/3 cup sugar
1 tsp vanilla
2 Tbsp tapioca flour
1/3 cup oil
2 tsp cinnamon
2 Tbsp maple syrup
3 cups quick oats
3 mashed bananas


Preheat oven to 350 °F. Mix all ingredients thoroughly. The dough is a little sticky but can easily be dropped (and spread a little) by tablespoons on a cookie sheet lined with parchment paper. Bake for about 15 minutes (or until done).



Could easily add raisins if desired.
