Ingredients

9 cup Rice Chex®
1 cup semi-sweet chocolate chips
3/4 cup sunflower seed butter
1 tsp vanilla
1 1/2 cups powdered sugar

Directions

Melt the chocolate chips and sunflower seed butter together in a microwave safe bowl. I do it in 30 second intervals to be sure not to burn the chocolate. When melted, add the vanilla and stir. Next add the Chex and mix carefully to coat the cereal.

Put 1/2 the powdered sugar into a zip top bag, put the cereal mixture in and then top with the other 1/2 of powdered sugar. Shake to coat the cereal.

Notes

My kids LOVE this! It is a take off of Chex "Muddy Buddies". I did make it with coconut oil to replace the margarine but we lost coconut. I just upped the sunflower butter and it didn't seem to make much of a difference. My Mom made the traditional (with peanut butter) and she said she likes this one better! Great for a big crowd too!

Substitutions

You can use any kind of Chex type cereal for this. Use any neutral flavored crispy cereal that is safe for your needs.

The original recipe uses peanut butter; use any safe nut or seed butter that works for you. Commercially available sunflower seed butter may contain soy. If avoiding soy, you can make your own Sunflower Seed Butter using safe sunflower seed kernels.

Butter and Margarine: Butter is a dairy product made from cow’s milk. Margarine typically contains milk or soy, but there are milk-free and soy-free versions available.
Corn Substitutions: Corn is a common ingredient in products. Starch, modified food starch, dextrin and maltodextrin can be from corn.
