Mix yeast with 1/2 cup water and 1 tablespoon sugar, and let sit 10 minutes. Add rest of ingredients and beat for 10 minutes. You can do this by hand, but you'll appreciate it if you have a stand mixer. Dough will become stringy. Cover bowl with plastic wrap and let rise in fridge overnight. Spoon onto cookie sheets and bake at 425 °F until lightly brown.
Notes
This is my mother's recipe. My kids call her "Mamie" and this recipe has taken the name "Mamie Bread" and is a HUGE hit in our family. It's really nice for having company over for breakfast - you do all the work the day before and you'll be all calm and collected when your guests arrive! :)
Substitutions
Gluten: Gluten is a protein found in specific grains (wheat, spelt, kamut, barley, rye). Other grains are naturally gluten-free but may have cross-contact with gluten-containing grains. Look for certified gluten-free products if you need to avoid gluten. Find out more about wheat and gluten substitutions.
